Festive sweets when you are following a low potassium diet
Don’t know what to serve when you have guests for the festive period when you are following a low potassium diet? I’ve got you covered with this great dessert recipe that’s adaptable with lower potassium fruit options. This is a super easy recipe to make and lower in sodium than some of the ready-made pavlova products. It’s an oldie but most certainly a goodie. Enjoy!
Pavlova
Serves 8
7 (50g) eggs
270g caster sugar
2 teaspoons white vinegar
2 teaspoons of cornflour
½ teaspoon vanilla extract
300ml thickened cream
1 punnet of raspberries or strawberries, hulled and chopped into quarters
2 kiwifruit, peeled and chopped
2 passionfruit, cut in half
Preheat the oven to 100 degrees
Line a round oven tray with foil and brush with a little melted butter and dust with a little cornflour to ensure it doesn’t stick
Using an electric mixer or handmixer whisk your eggs until peaks form
Gradually add the caster sugar 2 tablespoons at a time and mix well each time
Mix until the meringue is glossy and no sugar remains ie, it is all dissolved
Add the cornflour, vanilla extract and vinegar and gently whisk until combined
Gently spoon meringue onto the tray and pile high. I generally measure about a 20cm diameter as a guide
Use the back of a spoon or spatula and smooth down the top and sides of the pavolva
Then create little peaks on the edges, this will give the pavlova a nice crunch
Bake in the oven for 90 minutes
Turn off oven, open door slightly and leave it to cool down completely
Now whisk your cream until soft peaks form
Spoon the cream over the top of the pavlova, spoon over the passionfruit so its evenly spread
Add the chopped berries and kiwifruit and serve
